Adam Eskin is the founder of DIG, formerly Dig Inn, a vegetable-forward, farm-to-table restaurant group founded in 2011. Public profiles describe him as having built DIG from its early New York City roots into a 30+ location restaurant brand with roughly $100 million in revenue.
