Background

Uma Valeti is a Mayo Clinic–trained cardiologist who became a pioneer of the cultivated (cell-cultured) meat industry. He earned his medical degree at the Jawaharlal Institute of Postgraduate Medical Education and Research (JIPMER) in Pondicherry, India, then completed residencies at Wayne State University and SUNY Buffalo. He went on to complete fellowships at the Mayo Clinic in Cardiovascular Disease (2001–2004) and Interventional Cardiology (2004–2005), along with advanced cardiovascular imaging training. He practiced as an interventional cardiologist and served as a professor of cardiovascular medicine at the University of Minnesota, and is now an adjunct professor in Cardiovascular Medicine at the Stanford School of Medicine.

His pivot from medicine to food came out of his clinical research. Around 2005, while working on stem-cell studies to repair damaged heart muscle at the Mayo Clinic, Valeti realized that the same cell-culturing techniques could be used to grow animal muscle tissue — meat — directly from cells, without raising and slaughtering animals. He frames the career change as a continuation of his mission to save lives, saying he can "save many more lives than I would if I continued practicing as a cardiologist — like multiple magnitudes more."

In 2015 (publicly launching in 2016) he co-founded Memphis Meats alongside stem-cell biologist Nicholas Genovese and tissue engineer Will Clem. The company produced an early cultured meatball demo (February 2016) and cultured chicken and duck (March 2017), and was one of the first companies in the cultivated-meat space. Memphis Meats rebranded as UPSIDE Foods in May 2021, opened its EPIC production facility in Emeryville in November 2021, and in June 2023 became one of the first companies to receive U.S. regulatory clearance (USDA/FDA) to sell cultivated chicken in the United States.

Valeti has been widely recognized for this work, including being named a "Global Thinker of the Decade" by Foreign Policy magazine (2019). He is also a TED speaker and a frequent voice on the future of food and sustainable protein.
